For much of the world, vegetarianism (素食主义) is largely a matter of economics: Meat costs a lot more than beans or rice, so meat becomes a special-occasion dish. I first visited hutong as part of a tourist group several years ago. We rode on a trishaw（脚踏三轮车） with a guide explaining the history, architecture and lifestyle of the local inhabitants.
